Spring is approaching quickly, and with the arrival of warm weather comes a lot of great things, from beautiful flowers and sunny days to the freedom to explore outside with friends and family. It’s also a great time for people who love to garden. There’s no better feeling than knowing that a fresh, vital garden is just around the corner! But while it’s always nice to know that your garden will soon flourish, the wait can be tough. You don’t have to wait, and wait, and wait . . . especially if you are planting spring vegetables. If you’re looking forward to planting organic spring vegetables, but you aren’t looking forward to a long wait to see them sprout, have no fear. These are our favorite fast-growing spring veggies!

There’s nothing wrong with being eager to see your spring plants sprout. When you want to see fast results, give these tasty vegetables a try!

  • beet root in veggie gardenBeets: These will sprout in 40-70 days
  • Carrots: Carrots sprout between 50-70 days (the longer you wait the larger they’ll be)
  • Kale: 30-65 days is all it takes for kale (you can choose to have them as a baby green or allow them to grow full-size)
  • Endive: 35-50 days to sprout
  • Peas: 50-60 days (you may benefit from presoaking peas)
  • Turnips: 35-50 days for these (did you know that you can eat the root as well, not just the leaves?)
  • Rutabagas: 35-50 days to sprout
  • Onions: 40-50 days to sprout (this is true whether it’s a baby bulb, onion stalk, or micro-onion green you want to grow)
